Gino D’campo serves up a three bird roast dish on Lets Do Christmas Lunch with Gino and Mel.
The ingredients are: 12 rashers of streaky bacon, 1 turkey breast , skin removed, 1 large chicken breast, 4 pigeon breasts, 200g sausage meat, 1 tbsp chilli flakes, 8 dried apricots finely chopped, 1 tbsp chopped sage, 50 vac pac chestnuts, 2 sticks celery, roughly chopped, 4 cloves of garlic, lightly crushed, 2 carrots , roughly chopped, 1 tbsp flour, 1 onion, roughly chopped, 150ml white wine and 200ml stock , chicken, turkey or vegetable.
