Gino serves up pan-fried figs wrapped in parma ham on Lets Do Christmas Lunch with Gino and Mel.
The ingredients are: 2 figs – not too ripe, 4 slices parma ham, 1 tbsp olive oil, 1 tbsp runny honey, 50g gorgonzola, 1 tbsp white wine vinegar, 2 tbsp olive oil, 1 tsp runny honey, 1 banana shallot, cut into rings and 2 heads of chicory.
To prepare the dish, cut each fig in half, then wrap each half in a slice of parma ham.
Heat the olive oil in a frying pan on a medium high heat.
Place the figs cut side down into the pan and cook for 1 minute until the Parma ham is crispy. Then turn them over and cook for a further minute on the other side.
Whilst the figs are cooking, mix together the vinegar, olive oil and honey. Season with salt and pepper, then stir in the shallot.
Break the chicory leaves up into a large bowl, then add a little dressing to cover the leave, then place them on a plate.
Add a drizzle of honey to the figs then remove from the pan and place on top of the chicory.
Break the gorgonzola into large pieces and scatter over the salad.
