Gino D’Acampo serves up porchetta stuffed roasted belly of pork Let’s Do Christmas with Gino and Mel.
Gino says: “This is a dish that is traditionally served at Christmas in Italy as an alternative to Turkey.”
The ingredients are: 1 x 5kg pork belly, ribs removed skin scored, 50g butter, 2 onions, finely chopped, 1 tsp fennel seeds, light crushed, 2 tbsp rosemary, finely chopped, 2 tbsp sage, finely chopped, 1 tbsp thyme leaves, 250g sausage meat, 50g chicken livers, finely chopped, 25g pinenuts, toasted, 4 carrots, 4 sticks of celery, 2 bulbs of garlic, cut in half and 150 ml white wine.
