Gino D’Acampo smoked salmon fishcakes recipe on Let’s Do Christmas with Gino and Mel

Gino D’Acampo serves up smoked salmon fishcakes with lemon crème fraiche using leftover mash potatoes on Let’s Do Christmas with Gino and Mel.

The ingredients are: 150g ready made mashed potato, 50g smoked salmon trimmings, 1 tbsp capers, 1 tbsp chopped dill, Zest of 1 lemon, 1 egg yolk, 1 tbsp flour, 1 egg lightly beaten, 50g breadcrumbs, 4 tbsp sunflower oil, 3 tbsp crème fraiche, 1⁄2 lemon zesy, a dash of olive oil, 1 tbsp chives, salt pepper, rocket leaves to serve, a squeeze of lemon, Lots of black pepper and olive oil.
