Tom Kerridge makes a delicious apple and toffee crumble pie for a winning dessert at any dinner party on Tom Kerridge’s Proper Pub Food.
Tom makes his dessert with a flavoursome buttery crispy crumble and apples full of flavour with a real crunch.
The ingredients are: Bramley apples, 4 Cox apples, 100g butter, cubed, 100g caster sugar, Finely grated zest of 1 orange and 1 cinnamon stick.
For the toffee: vegetable oil for greasing the baking parchment, 450g soft dark brown sugar, 125ml water, 130g golden syrup, 100g black treacle and 1 tsp cream of tartar.
For the pastry: 225g butter, softened, 125g caster sugar, 1 egg yolk, beaten and 400g plain white four, plus extra for rolling out the pastry.
For the crumble topping: 200g plain white flour, 100g caster sugar, 80g butter, softened, 35g ground almonds and 10g flaked almonds.
