Rachel Allen makes smoke salmon and chives fish cakes for the festive season on Rachel Allen’s Easy Christmas.
The ingredients are: 500 g floury potatoes, unpeeled and scrubbed clean, 225 g smoked salmon, 3 tbsp olive oil, 1 red onion, finely chopped, 2 tbsp finely chopped chives, 1 tbsp capers, drained and chopped, good squeeze lemon juice,1 egg, beaten, 75 g breadcrumbs and 15 g butter.
