Simon Rimmer serves up a sweet and savoury bacon baklava dish Daily Brunch.
Baklava is a traditional Ottoman dessert popular across Europe, the Middle East and North Africa that is a rich, sweet pastry made of layers of filo normally filled with chopped nuts and sweetened and held together with syrup or honey.
Simon’s ingredients for his sweet and savoury version are: 200g pistachios, 100g walnuts, 12 slices crispy grilled smoked bacon, crumbled, Zest of 3 limes, 1 tbsp fresh thyme, 75g sugar, pinch ground cardamom, 400g filo pastry and 225g melted butter.
Honey syrup: 175g honey, 125g sugar, Juice of 3 limes, 50ml orange blossom water and 250ml water.
