Simon Rimmer serves up Gruyere stuffed tomatoes light savoury filling on Daily Brunch with Acado that is a great vegetarian dish.
The ingredients are: 8 large ripe tomatoes, 350g breadcrumbs, plus 2 tablespoons for toasting, 150ml organic milk, 2 organic eggs, beaten, 2 garlic cloves, crushed, 2 tablespoons basil leaves, freshly chopped, 2 tablespoons parsely, freshly chopped, 6 tablespoons Gruyère, grated, 1 Pinch sea salt, to season, 1 Pinch black pepper and to season and 1 onion, finely chopped.
