Sally Bee showcase her healthiest lasagne recipe on Lorraine. Sally who became very health conscious after suffering a heart attack many years ago says:
“What saved my life, was that prior to being ill, I had eaten a healthy diet. Not because I thought my health needed looking after at that young age, but because if I didn’t, I piled on the pounds.
Eating a healthy diet had meant that my body was infact ‘well enough’ to take such a huge catastrophe. How unbelievably lucky I had been. Since then I have been fascinated to learn about how I can continue to improve on this. I’ve learnt a lot. And I want to share it with you.”
Her lasagne recipe makes use of lost of fresh ingredients and low fat cheese to make the dish a very healthy option.
The ingredients are: 2 tbsp extra-virgin olive oil, 1 large onion, peeled and finely chopped, 4 organic carrots, scrubbed but skin on and finely chopped, 2 organic celery sticks, finely chopped, 2 garlic cloves, peeled and crushed, 350g lean minced steak or turkey mince, 150g chopped button mushrooms, chopped, 300ml beef or chicken stock, 150ml red wine or extra stock, 400g can chopped tomatoes, 4 tbsp tomato purée 1 tbsp dried oregano or mixed herbs, Freshly ground black pepper, Handful of fresh flat-leaf parsley, chopped, 10-12 sheets dried no-pre-cook lasagne and 40g mature low-fat Cheddar cheese.
For the sauce: 3 tbsp cornflour, 600ml cups semi- skimmed milk and Pinch of freshly grated nutmeg.
