Gino D’Acampo serves up a delicious savoury pumpkin gnocchi made from leftover Halloween pumpkin on This Morning.
Gnocchi is a sort of pasta for potato lovers – these are small Italian dumplings usually made from potato, flour and egg and shaped into small ovals with a ridged pattern on one side. They can also be made from semolina flour, as they are in Rome. Gnocchi are often poached and then cooked with breadcrumbs and grated cheese in the oven and served as a hot starter.
Today Gino use pumpkin as the key ingredient for his gnocchi dish.
The ingredients are: 800g floury potatoes, 500g pumpkin, Extra virgin olive oil, ½ teaspoon dried chilli flakes, 1 tablespoon fresh rosemary leaves, finely chopped, 2 large eggs, beaten, 200g plain flour, plus extra for dusting, 80g freshly grated Pecorino cheese, Salt and white pepper to taste.
