Tom Kerridge serves up tasty treacle tart on Tom Kerridge’s Best Ever Dishes.
Tom says: “Treacle tart is a firm favourite when it comes to puddings and serving it with homemade mascarpone ice cream ramps it up a notch.”
The ingredients for the mascarpone ice cream, 250g mascarpone, 100g caster sugar, pinch salt, 150ml milk, 225ml double cream and ½ vanilla pod, seeds scraped.
For the pastry: 250g butter, softened, 100g caster sugar, pinch of salt, 250g plain flour, plus extra for dusting, 190g bran flakes, blended to a powder and 2 free-range eggs, beaten.
For the tart filling: 225g butter, 675g golden syrup, 190g brioche crumbs, 75ml double cream, ½ tsp salt, 2 free-range eggs, beaten, 1 large free-range egg yolk and flaky sea salt, to finish.
