Lorraine Pascale makes mini spiced apple tarte tatin with vanilla frozen Greek Style yogurt on How To Be A Better Cook.
Lorraine says: “If you don’t have a rigid plastic container of the correct size, then line a roasting tin with a double layer of cling film before adding the frozen yoghurt mixture.”
The ingredients for the frozen yogurt: 500g low, no or full-fat Greek yogurt (use actual Greek yoghurt not ‘Greek-style yoghurt’), 50g icing sugar, sifted and 1 vanilla pod, seeds only, or 1 tsp vanilla extract.
For the tarts: 3 big eating apples, such as Granny Smith, ½ tsp ground cinnamon, large pinch ground ginger, 100g butter, plus extra for greasing, 150g caster sugar, plain flour, for dusting and 340g pack puff pastry.
For the garnish: 1 large handful of pecan nuts, pinch ground ginger and 6 mint sprigs (optional).
