Jamie Oliver makes a tasty looking chicken shawarma kebab on Jamie’s Comfort Food.
Shawarma comes from the Turkish word ‘çevirme’, meaning ‘turning’, because it’s turned constantly through cooking to amplify that incredible flavour and texture.
Jamie says: “This is a kebab like you have never had before. To make this feast for your family or friends, with all the accompaniments outside on a barbecue or over an open fire is next-level cooking, definitely an event, and people are going to talk about it for a long time afterwards.”
The ingredients are: 10 cardamom pods, 1 heaped teaspoon fennel seeds, 1 heaped teaspoon cumin seeds, 1 heaped teaspoon coriander seeds, 1 level teaspoon ground cinnamon, 1 level teaspoon ground allspice, 1 level teaspoon ground cloves, 1 level teaspoon sweet smoked paprika, 8 cloves of garlic, 4 fresh bay leaves, 4 tablespoons natural yoghurt, 1 heaped tablespoon smooth peanut butter, olive oil, 16 boneless chicken thighs (skin on), 3 large red peppers, 3 onions, 1-2 lemons and 1-2 large tomatoes.
For the flatbreads: 2 heaped tablespoons sesame seeds, 900 g strong white bread flour, plus extra for dusting, 100 g wholemeal flour and 1 teaspoon baking powder.
