Stevie Parle makes cinnamon lentil cakes snack on The Spice Trip cinnamon trail in Sri Lanka.
The ingredients are: 125g red lentils (or black mung beans), soaked for at least 6 hours, ½ tsp table salt, 60g freshly grated coconut, 1 onion, finely chopped, 1 clove of garlic, crushed with a pinch of salt, 2cm piece of ginger, peeled and grated, 1 small green chilli, finely chopped, 20 fresh curry leaves, roughly chopped, ½ tsp turmeric, ½ tsp chilli powder, 1 tsp ground cinnamon, 2 tsp cumin seeds, about 150g fine rice flour, vegetable oil, for frying and sea salt, to sprinkle.
