Brian Turner cooks smoked trout pate during a tour of Cheshire on A Taste Of Britain.
Brian’s inspiration for the recipe came after he visited The Smokehouse fine food outlet in the county.
The Smokehouse was established over 100 years ago by John William Ward, who learnt his craft of ‘smoking’ in Canada. John set up his first small business in Cheetham Hill Manchester in 1907 and the company is still in the hands of the same family.
Today the business produce traditional smoked meats, poultry and fish, to fresh meats and vegetables, the choice of fine quality produce is evident everywhere in the well appointed store.
Brian makes his dish with locally sourced ingredients including horse radish, cream cheese and dill.
