Brian Turner serves up asparagus salad with radish dressing on A Taste Of Britain for Janet Street-Porter to try on their visit to Oxfordshire. Brian got the inspiration for his dish after visiting Wykeham Park Farm at the height of the asparagus season.
Brian says: “A healthy, zingy starter. Dress simply boiled asparagus with fresh herbs, radish strips, lemon juice and mustard.”
The ingredients for Brian’s dish are: 340g/12oz bunch asparagus, sea salt, iced water, 1 tsp Dijon mustard, 1 tbsp lemon juice, 3 tbsp olive oil, 3 tbsp ground nut oil, 6 radishes, cut into 3mm batons, 1 tsp chopped fresh tarragon, 1 tsp chopped fresh chervil, 1 tsp chopped fresh parsley, 1 tsp chopped chives and freshly ground black pepper.
