Stevie Parle makes sirloin steak with grilled vegetables and cumin yogurt on The Spice Trip cumin trail in Turkey.
Stevie says: “When I need beef for a recipe I always try to find dry aged, rare breed meat. It’s far tastier than the commercial types, although it does cost a bit more. I try to eat better meat less frequently.”
The ingredients are: 4 x 200g sirloin steaks, 2 tsp dried oregano, Olive oil, 4 Turkish green peppers or 2 normal green peppers, 1 aubergine, cut into 1cm slices, 4 courgettes, cut into ½cm slices, ½ tsp salt, 6 cherry tomatoes, Red wine vinegar, Salt and freshly ground black pepper and 3 tbsp cumin spice blend.
For the yoghurt dressing: ¼ garlic clove, 1 heaped tsp cumin seeds, toasted and 6 tbsp Greek yoghurt, plus extra for serving.
