Jamie Oliver makes a classic Itialian risotto, risotto allo zafferano or yellow saffron risotto on Jamie’s Comfort Food.
Jamie says: “This classic risotto is wonderful with Ossobuco, but can absolutely be enjoyed in its own right as a starter or as an alternative to a pasta course. It’s very simple and humble in its core ingredients, apart from one, which just happens to be the most expensive ingredient on the planet by weight – saffron! Thankfully, you don’t need much of it to achieve that brilliant bright yellow vivacity.”
The ingredients are: 1.2 litres fresh chicken stock, 1 onion, 1 celery heart, 2 knobs of unsalted butter, 1 good pinch of saffron threads, 450 g Arborio risotto rice, 200 ml Pinot Bianco or Verdicchio, 80 g Parmesan cheese and extra virgin olive oil.
