Brian Turner cooks roast Aylesbury duck with olives and turnips in the Thames Valley on A Taste Of Britain.
Janet Street-Porter assists Brian in his out door kitchen after she took time out to learn all about Henley’s history and regatta before rounding up some hungry rowers for Brian to feed with his roast Aylesbury duck with olives and turnips, at the famous Leander Rowing Club.
Henley Regatta was first held in 1839 and has been held annually ever since, except during the two World Wars. Originally staged by the Mayor and people of Henley as a public attraction, the emphasis rapidly changed so that competitive amateur rowing became its main purpose.
Aylesbury has long been associated with ducks, which is where duck production in England used to be centred, but now most commercial ducks come from Lincolnshire and Norfolk and are very distant descendants of the original Aylesbury breed.
Brian’s celebratory dish pays tribute to the origins of the humble duck and the ingredients sourced locally.
