Kitty Hope and Mark Greenwood makes salt liquorice caramels on Sweets Made Simple. The duo says: “The tangy liquorice gives these salted caramels a quirky edge.”
Liquorice is a confectionery flavoured with the extract of the roots of the liquorice plant. A wide variety of liquorice sweets are produced around the world. In North America, liquorice is called black licorice (see also spelling differences) to distinguish it from similar confectionery varieties that are not flavoured with liquorice extract but commonly manufactured in the form of chewy ropes or tubes. To make their Salt liquorice caramels, the duo used: groundnut oil, for greasing, 125g unsalted butter, 225g granulated sugar, 200g condensed milk, 175ml golden syrup, 2 large pinches rock salt, or to taste, 10g raw liquorice powder and ¼ tsp black food colouring paste.
