Jamie Oliver makes Empire Roast Chicken with Bombay-style potatoes and Indian Gravy on Jamie’s Great Britain.
In this dish Jamie combines a traditional roast chicken with curry spices to produce a very tasty dish.
The ingredients for the chicken and marinade: 1.4 kg free range chicken, 1 heaped tbsp finely grated garlic, 1 heaped tbsp finely grated fresh ginger, 1 heaped tbsp finely grated red chilli,1 heaped tbsp tomato purée, 1 heaped tsp ground coriander, 1 heaped tsp ground turmeri, 1 heaped tsp garam masala, 1 heaped tsp ground cumin, 2 heaped tsp natural yogurt, 2 lemons and 2 level tsp sea salt.
For the Indian gravy: 1 cinnamon stick, 3 small red onions, 10 cloves, 3 tbsp white wine vinegar, 3 tbsp Worcestershire sauce, 3 level tbsp plain flour, 500 ml organic chicken stock and natural yogurt, to serve (optional).
For the Bombay-style potatoes: 800 g new potatoes, sea salt and ground pepper, 1 lemon, 2 or 3 tbsp olive oil, a knob of butter, 1 heaped tsp black mustard seeds, 1 heaped tsp cumin seeds, 1 heaped tsp garam masala, 1 heaped tsp turmeric, 1 bulb of garlic, 1 fresh red chilli, deseeded and finely sliced, 2 tomatoes, roughly chopped and 1 small bunch of fresh coriander.
