Nigel Barden serves up seared mackerel with pomegranate and manuka honey dressing for foodie Thursday on Drivetime with Simon Mayo.
Manuka honey is produced in New Zealand by bees that pollinate the native manuka bush. Advocates say it has been in traditional use for generations to treat wound infections.
Manuka honey is traditional very expensive, but any other type of honey would do.
The ingredients for the Mackerel are: 2 tbsp extra virgin olive oil, 1 small spring green, ½ red onion, 1 lemon, zested & juice, 4 fresh mackerel fillets, pin boned, cut into 2 equal pieces and the skin scored diagonally with a sharp knife at 1cm intervals.
For the dressing: 1 pomegranate, 2 tsp Manuka honey, 1 red pepper, fairly small dice, 3 large fresh mint sprigs, finely chopped, 3 tsp red wine vinegar, 4 tbsp extra virgin olive oil, ¼ tsp rose harissa, 1 level tsp chopped capers, freshly ground black pepper, for seasoning.
