James Martin cooks Warm smoked lobster salad with radish, and a lime vanilla mango dressing for singer Paloma Faith on Saturday Kitchen.
James says: “This is a rather smart salad. Smoked lobster, an interesting selection of salad leaves and a sweet, sharp fruity dressing.”
The ingredients are: 4 x small whole cooked lobster and 50g butter.
For the dressing: 1 mango, peeled and finely diced, 1 vanilla pod, seeds only, 1 lime, juice only, 1 tbsp sherry vinegar and salt and black pepper.
For the salad: 40g yellow frisée lettuce, 6 English radishes, finely sliced on a mandoline, 1 tbsp finely chopped chives, 40g sea aster, 40g bull’s blood leaves, 40g baby red sorrel, 40g mache salad leaves and 1 red pepper, finely diced.
