Gino D’acampo showcase his lemon and green olive roast chicken recipe on Let’s Do Lunch.
The ingredients are: Olive oil, 4 potatoes, cut into wedges, 2 lemons, 1 Whole chicken about 1.2kg, A bunch of thyme, Salt and pepper, 50g butter of butter, 100ml chicken stock, 100g of garlic stuffed green olives.
For the salad: 350g peas, 1 red chilli, seeds removed and finely diced, 75g soft goats cheese, 8 mint leaves, shredded, Olive oil and Salt and pepper.
