Paul Rankin served up tasty spiced apple and ginger glazed pork ribs with rice pilau on James Martin’s Saturday Morning.
The ingredients are: 2 tablespoons salt, 2 garlic cloves, finely chopped, 3 tablespoons grated fresh ginger, 3 tablespoons soy sauce, 600 ml apple juice, 1 large Bramley apple, peeled, cored, and sliced, 1 tablespoon chilli flakes, 4 tablespoons demerara sugar and 2.25 kg pork ribs.
For the Persian Rice Pilau: 200 g onions, finely chopped, 225 g unsalted butter, 1 cinnamon stick, 1 bay leaf, 1 tablespoon finely chopped fresh ginger, 1 tablespoon curry powder, 550 g long-grain rice, 1.75 litres vegetable stock, hot, 100 g sultanas, grated zest of 1 lemon, salt and 100 g pine nuts, lightly toasted.
