Ainsley Harriott banana bread with a Bahamian sky juice and toasted coconut recipe on Ainsley’s Taste of the Bahamas

Ainsley Harriott served up a delicious banana bread with a Bahamian sky juice and toasted coconut on Ainsley’s Taste of the Bahamas.

The ingredients are: 125g unsalted butter, softened, plus extra for greasing, 100g soft dark brown sugar, 3 medium eggs, 3 very ripe bananas, mashed, 1 tsp vanilla extract, 3 tbsp Greek yoghurt or full fat milk, 1-2 tbsp coconut rum or 1 tsp coconut extract, 225g plain flour, sifted, 40g good quality dark cocoa powder, sifted, 1 tsp baking powder, ½ tsp salt, ½ tsp cinnamon, a grating of fresh nutmeg or ½ tsp ground nutmeg, 80g dark or milk chocolate chips and 1 ½ tbsp desiccated coconut.

For the Sky Juice Frosting: 120g unsalted butter, softened, 120ml sweetened coconut condensed milk or sweetened condensed milk, 2 tsp coconut rum or ½ tsp coconut/vanilla extract, pinch of sea salt and zest of ½ lime.

To Serve: fresh nutmeg, for grating and 1 tbsp coconut flakes, toasted.
