Prof. Tim Spector served up roasted aubergine traybake with chickpeas, halloumi and kefir dressing on What Not To Eat.
The ingredients are: 400 g 2 x tins chickpeas, drained and patted dry drained and patted dry, 350 g cherry tomatoes, 2 peppers, cut into 2cm chunks, 200 g halloumi, cut into 1cm cubes, 3 garlic cloves, unpeeled, 2 1/2 tsp. ground cumin, 1 1/2 tsp. ground coriander, 1 tsp. chilli powder, 4 Tbsp. extra virgin olive oil, 2 aubergines, halved, 3 Tbsp. tahini, 180 ml kefir, 2 tsp. sumac, 20 g coriander, roughly chopped, 4 spring onions, thinly sliced, 3 Tbsp. pomegranate seeds, Juice of lime, Salt and black pepper.
