Gino D’Acampo showcase his herby chicken meatballs with a coconut and noodle broth recipe on Let’s Do Lunch with Melanie Sykes.
The ingredients are: 500g minced chicken, 1 red chilli finely chopped, 2 tbsp chopped coriander, 1 tbsp soy sauce, 4 tbsp fresh breadcrumbs soaked in 2 tbsp milk and 2 tbsp vegetable oil.
For the broth: 1 tbsp vegetable oil, 2 cloves garlic, sliced, 2cm piece ginger, 2 x 400g tin coconut milk, 3 lemon grass stalks, 1-2 tbsp fish sauce, 1 tsp brown sugar, Juice of 1 or 2 limes, 2 tbsp chopped herbs, coriander and mint mixed and 300g packet of cooked rice noodles.
