Mary Berry served up tasty fillet tails of beef with bearnaise sauce on Mary at 90: A Lifetime in Cooking.
The ingredients for the beef and salad are: 4 beef tail fillets (175g each), olive oil, for frying, 2 tsp Dijon mustard, 200g tenderstem broccoli, 75g rocket, balsamic glaze, to drizzle, 55g Parmesan, shaved, salt and freshly ground black pepper.
For the béarnaise sauce: 1 shallot, finely chopped, 6 tbsp white wine vinegar, 2 egg yolks, 100g unsalted butter, cubed, 1 tsp chopped fresh tarragon, 1 tbsp chopped fresh parsley, salt and freshly ground black pepper.
