Mary Berry served up tasty arancini with porcini mushrooms, risotto rice and dolcelatte cheese on Mary at 90: A Lifetime of Cooking.

The ingredients for the arancini are: 30g dried porcini mushrooms, about 250ml vegetable or chicken stock, 115g dolcelatte, chopped into small cubes, 1 tbsp olive oil, 3 banana shallots, finely chopped, 125g risotto rice, 1 garlic clove, finely grated, 25g Parmesan (or alternative vegetarian hard cheese), finely grated, 1 tbsp freshly chopped tarragon, 15g panko breadcrumbs, salt and freshly ground black pepper.

To coat and fry: 2 free-range eggs, beaten, 150g panko breadcrumbs and 8 tbsp sunflower oil, for frying.
