Mary Berry and Alex Jones served up a tasty spinach and mushroom lasagne with balsamic vinegar sun dried tomato paste on Mary at 90: A Lifetime of Cooking.
The ingredients for the lasagne are: 6–8 sheets dried lasagne, 2 tbsp olive oil, 1 large onion, roughly chopped, 500g button mushrooms, sliced, 2 large garlic cloves, finely grated, 30g plain flour, 2 x 400g tins chopped tomatoes, 1 tbsp freshly chopped thyme leaves, 2 tsp balsamic vinegar, 2 tbsp sun-dried tomato paste and 200g baby spinach, trimmed.
For the cheese sauce: 55g unsalted butter, 55g plain flour, 600ml hot milk, 2 tbsp Dijon mustard, 150g mature cheddar, coarsely grated, 55g Parmesan (or alternative vegetarian hard cheese), coarsely grated, salt and freshly ground black pepper.
