Mary Berry and Gabby Logan served up a tasty gravadlax with mustard dill sauce on Mary at 90: A Lifetime of Cooking.
The ingredients for the salmon are: 1 whole fresh salmon, filleted to give two sides (approx. 1.8kg total), 2 tbsp coarse sea salt, 6 tbsp caster sugar, Masses of freshly ground black pepper and Large fresh sprigs of dill (or 2-4 tbsp chopped fresh dill).
For the mustard dill sauce:3 tbsp Dijon mustard, 2 tbsp caster sugar, 1 tbsp white wine vinegar, 1 egg yolk, 150ml (¼ pint) sunflower oil, Salt and freshly ground black pepper and 2 tbsp chopped fresh dill.
