Mary Berry served up a tasty fragrant chicken traybake with roasted vegetables basil and Thai sauce on Mary at 90: A Lifetime of Cooking.
The ingredients are: 1 large aubergine, sliced into half moons, 1 yellow pepper, seeds removed and sliced into large pieces, 1 red pepper, seeds removed and sliced into large pieces, 1 large onion, sliced, 3 tbsp sunflower oil, 3 dried lime leaves, 1 large stick lemongrass, bashed, 3 large chicken breasts, each sliced in half, 2 tbsp sweet chilli sauce, 150g baby spinach leaves, small bunch Thai basil, chopped, salt and freshly ground black pepper.
For the sauce: 400ml tin coconut milk, 2 tbsp Thai red curry paste, 2 garlic cloves, crushed, 2 tsp grated fresh root ginger, 1 lime, juice only, 2 tsp fish sauce and 2 tbsp sweet chilli sauce.
