James Martin served up tasty roast partridge with beetroot, kale and blackberries on James Martin’s Saturday Morning.
The ingredients for the partridge are: 2 partridges, 25g butter, 25ml veg oil, A few sprigs of thyme, 3 cloves of garlic, Salt and pepper.
For the sauce: 100g blackberries, halved, 50ml madeira, 200ml veal jus, 25g butter, 100g purple kale, 2 red endive, halved lengthways, 4 cooked baby beetroots, halved, 25g butter, Salt and pepper.
To serve: Mashed potato, Beetroot puree and 50g roasted hazelnuts.
