Nisha Katona served up tasty IPA battered onion bhaji with mango and mint lassi on Nisha Katona’s Home Kitchen.
The ingredients are: 260g gram/chickpea flour, 1/4 tsp bicarbonate of soda/baking soda, 1 tsp ajwain seeds, 1 tsp nigella seeds, 1 tbsp white poppy seeds, 300ml/1¼ cups IPA beer (the fierier the better), 1 ½ tsp salt, juice of 1 lemon, 1 tsp ground coriander, 1 tsp ground cumin, ¼ tsp chilli powder, 1 onion, roughly chopped, 2 cloves garlic, crushed, 150g broccoli, stems and florets cut into bite-sized pieces, 2 tbsp chopped fresh coriander, vegetable oil, for frying and chutney or raita, to serve.
For the lassi: 425g Alphonso mango pulp or tinned mango slices, 150ml plain yoghurt, 150ml whole or semi-skimmed milk, juice of 1 lime, 2 tbsp chopped fresh mint leaves and salt.
