Tom Kerridge served up a delicious upside down blood orange and almond cake on Tom Kerridge Cooks Spain.
The ingredients are: 2 blood oranges, 250 g unsalted butter, softened, 250 g golden caster sugar, 1 vanilla pod, seeds scraped, 4 large free-range eggs, 150 g self-raising flour, 1 tsp baking powder, 150 g ground almonds.
For the orange marmalade glaze: 1 blood orange, juice only, 4 tbsp Seville orange marmalade and 3 tbsp orange brandy liqueur.
