John Torode apple cider cake with blackberry and cider sauce recipe on John and Lisa’s Weekend Kitchen

John Torode served up a delicious apple cider cake with blackberry and cider sauce on John and Lisa’s Weekend Kitchen.

The ingredients for the are: 250g butter, 250g caster sugar, 1 tsp vanilla extract or essence, 4 eggs, beaten, 300g plain flour and 1 heaped tsp baking powder.

For the apple compote: 2 granny smith apples, 1 bramley apple, 50mls maple syrup, 200ml cider and 2 tsp cinnamon.

For the topping: 200g blackberries plus 100g cut in half , 150ml cider , Grind of black pepper , 2 tbsp soft brown sugar, Crème fraiche, 1 tbsp icing sugar, 3-4 tbsp crème fraîche and 1 tbsp icing sugar.
