Seema Pankhania served up a tasty Keralan Egg Shakshuka on Sunday Brunch.
The ingredients are: 3 tablespoons of coconut oil↔ vegetable oil, 2 large onions, thinly sliced, ½ teaspoon of fennel seeds↔ cumin seeds, 3 green chillies, roughly chopped, 4 cloves of garlic, roughly chopped, 3cm of ginger, roughly chopped, 1 x 400g tin of tomatoes, 1 teaspoon of chilli powder, 1 teaspoon of garam masala, plus extra for sprinkling, 200ml of coconut milk, 3–4 eggs, Salt and black pepper.
To serve: Crusty bread and 1 lime.
