Anna Haugh and Una Healy served up a delicious Irish honey cake with fairy butter and homemade honeycomb on Anna Haugh’s Big Irish Food Tour.
The ingredients for the Irish honey cake are: 150g salted butter, plus extra to grease, 60g dark muscovado sugar, 160g runny honey, 2 medium free-range eggs, beaten, 200g self-raising flour, sieved, 2 tsp ground cinnamon and ½ tsp ground ginger.
For the fairy icing: 175g unsalted butter, 300g icing sugar, 2 tsp orange blossom water and ½ orange, zest only.
For the honeycomb: butter, for greasing, 225g glucose, 225g caster sugar, 75g golden syrup and 25g bicarbonate of soda.
For the honey syrup: ½ lemon, juice only, 3 tbsp runny honey and 2 tsp orange blossom water.
To serve: 50g pistachio nuts, shelled and unsalted, roughly chopped and a few edible flowers, 1 tbsp fresh mint leaves, 1 orange, zest only and 1 lemon, zest only.
