Briony May Williams served up delicious carrot cake energy bars with cream cheese frosting on Morning Live.
The ingredients are: 100g butter, cut into cubes, 200g oats, 75g mixed seeds (such as sunflower, pumpkin etc), 1 tbsp chia seeds, 40g desiccated coconut, 3 tsp mixed spice, pinch salt, 2 medium carrots, peeled and grated, 1 banana, mashed and 100g runny honey or maple syrup.
For the topping: 1 tbsp cream cheese, 1 tbsp runny honey or maple syrup and ½ tsp mixed spice.
