Marcus Wareing served up tasty orange and chilli salted BBQ spatchcocked Poussin with honey and fresh salad on Marcus In The Med: Mallorca.
The ingredients are: 2 poussins and 75g honey.
For the dry rub: Mixed peppercorns, Orange and chilli salt (or add fresh orange zest and chilli flakes to plain sea salt for a similar flavour), Dried mixed herbs and Paprika.
For the salad: 1 Romaine lettuce, shredded, 1 Cucumber, roughly chopped, 2 Green Peppers, roughly chopped, ½ fennel, finely sliced, 1 small onion, sliced, 1 large tomato, Mixed herbs, ½ bunch of chives, finely chopped and Pinch of orange and chilli salt.
For the vinaigrette dressing: 2 tsp wholegrain mustard, 1 tbsp white wine vinegar, 75ml extra virgin olive oil, Salt, Pepper and Jam jar.
