Gino D’Acampo makes summer roast beef recipe on let’s Do Lunch with Mel and Peter Andre.
The ingredients are: 2.5kg piece beef topside, 1 onion cut into 1 cm rings, Olive oil, 2 sprigs of rosemary, 1 tbsp crushed black peppercorns, Olive oil, Salt and pepper, 500g new potatoes, 25g butter and 1 tbsp chopped parsley.
For the roasted garlic cream: 1 bulb garlic, cut in half, 200ml crème fraiche and Sea salt and freshly ground pepper.
For the tomato and onion bake: 2 onions, finely sliced, 12 tomatoes halved, 2 tbsp olive oil, A few thyme leaves, 150g fresh breadcrumbs and 40g grated parmesan.
