James Martin roast lamb with Middle Eastern spices, yoghurt and blacken tomato dressing recipe on James Martin’s Saturday Morning

James Martin served up tasty roast lamb with Middle Eastern spices, yoghurt and blacken tomato dressing on James Martin’s Saturday Morning.

The ingredients for the lamb are: 1kg lamb chops, Salt, to taste, 2 tbsp olive oil, 1tsp za’atar, 1tsp sumac and 2 lemons, 1 zested & juiced, and 1 cut into quarters.

For the sauce: 2 banana shallots, peeled and cut in half lengthways (100g net), 6 garlic cloves, unpeeled, 5 red chillis, 6 plum tomatoes, 75ml olive oil, 1 tbsp sumac, 1 tbsp za’atar and 2 tbsp pomegranate molasses.

To serve: Mint leaves, parsley, dill and coriander, finely chopped, 4 tbsp Greek yoghurt, 1 avocado, chopped and A few pomegranate seeds.
