Lisa Faulkner served up tasty sausage meatballs with spinach, fennel, roast chicken stock and spaghetti on Lorraine.
The ingredients for the meatballs are: 8 pork sausages, 2 tsp fennel seeds, crushed and olive oil, for frying.
For the tomato sauce: 1 small red onion, peeled and finely diced, 2 garlic cloves, finely grated, 2 celery sticks, sliced, 1 carrot, peeled and grated, 1 heaped tbsp tomato puree, 1 tin chopped tomatoes, 400ml vegetable or chicken stock, 4 – 6 frozen spinach cubes, Sea salt and pepper.
To serve: 300g spaghetti and 75g-100g cheddar cheese, grated.
