Lisa Faulkner served up a tasty £2 roast chicken with vegetables and gravy on Lorraine.
The ingredients for the chicken are: 1 large chicken (approx. 2kg), 1 lemon, cut in ½, ½ bunch thyme, 1 garlic, cut in half horizontally, olive oil, salt and pepper.
For the vegetables: 2 red onions, peeled and cut into wedges, 2 carrots, peeled and cut into large chunks, 2 leeks, cut into 4 chunks and 200g tender stem broccoli, trimmed.
For the roast potatoes: 1kg Maris piper, peeled and cut into chunks and 1 chicken stock cube.
For the gravy: 1 tbsp plain flour, 3-4 tsp chicken gravy granules and Approx 300-350ml boiling water.
