Ruby Bhogal served up tasty Ghanaian Spiced Kelewele with Roasted Peanuts on Ainsley’s Fantastic Flavours.
The ingredients include: ripe plantain, red onion, salt and oil for frying.
For the spice mix: ground ginger, ground cinnamon, ground nutmeg, cayenne pepper, ground aniseed and grated fresh ginger.
To serve: roasted chopped peanuts.
