Ainsley Harriott served up a delicious Fig, Hazelnut and Orange Cake with Honey Mascarpone on Ainsley’s Fantastic Flavours.
The ingredients are: 4-5 fresh ripe figs, plus extra (optional) to decorate, 150g unsalted butter, room temperature, 150g soft brown sugar, plus a tbsp for sprinkling, 3 medium eggs, 50g hazelnuts, finely ground in a food processor, 100g self-raising flour, ½ tsp baking powder, 1 tsp vanilla extract, 1 large orange, zest only, honey (preferably orange blossom), for drizzling and hazelnuts, roughly chopped, to decorate.
To Serve (optional): 150g mascarpone, 100g Greek yoghurt, 2-3 tbsp honey (preferably orange blossom) and ½ tsp vanilla extract.
