James Golding served up tasty chicken escalope with brown butter and capers on Sunday Brunch.
The ingredients are: 2 chicken breasts, battered out, panko breadcrumbs, plain flour, 2 beaten eggs, rocket salad, block of butter, 100g baby capers, bunch of flat leaf parsley, 2 lemons, 2 chopped shallots, 100g of good quality aged Parmesan cheese, olive oil, salt and pepper.
