James Martin served up tasty roast pork with carrots, mashed potatoes and caramelised apple sauce on James Martin’s Saturday Morning.
The ingredients are: 3kg rolled pork loin, scored and 1 tbsp sea salt.
For the sauce: 400ml veal jus, 25ml Madeira wine and 25g butter.
For the apple sauce: 2 apples, diced, 50g demerara sugar, Pinch allspice, Knob of butter and 1 orange, juiced.
For the carrots: 6 medium carrots, 50g caster sugar, 50g butter and 3 star anise.
To serve: Mashed potato.
