James Martin roast pork with carrots, mashed potatoes and caramelised apple sauce recipe on James Martin’s Saturday Morning

James Martin served up tasty roast pork with carrots, mashed potatoes and caramelised apple sauce on James Martin’s Saturday Morning.

The ingredients are: 3kg rolled pork loin, scored and 1 tbsp sea salt.

For the sauce: 400ml veal jus, 25ml Madeira wine and 25g butter.

For the apple sauce: 2 apples, diced, 50g demerara sugar, Pinch allspice, Knob of butter and 1 orange, juiced.

For the carrots: 6 medium carrots, 50g caster sugar, 50g butter and 3 star anise.

To serve: Mashed potato.
