James Martin and Pip Lacey served up a tasty BBQ pot roasted chicken with Thai flavoured salsa and wood roasted broccoli on James Martin’s Saturday Morning.
The ingredients are: 1 large corn-fed chicken, A few chillies, 1 lemongrass and 300ml water.
For stuffing: 200g minced chicken, 2 cloves garlic, 1 lemongrass, Small bunch Thai basil and Small bunch coriander.
For the Thai Salsa: 2 cloves garlic, 2 green chilli, 1 shallot, diced, 1 small bunch coriander, 1 small bunch mint, 1 small bunch Thai basil, 50g palm sugar, 15ml fish sauce, 25ml soy sauce and 100ml olive oil.
To serve: 300g broccolini.
